Chicken Tortilla Soup
This is the kind of soup that fixes a long day. It’s cozy, deeply satisfying, and comes together on a busy weeknight without much fuss. One pot, a little shredding, and dinner practically makes itself.

Why I Love It
There’s something about a big pot of tortilla soup that just feels like a hug. It’s the meal I keep coming back to when I want something warm and comforting but don’t want to spend all night in the kitchen. It’s forgiving, it’s cozy, and it always tastes like I put in way more effort than I actually did.
Ingredients
- 2 Tbsp light olive oil
- 1 large yellow onion, chopped
- -4 garlic cloves, minced
- 32 oz chicken broth
- 28 oz crushed tomatoes
- 1 lb chicken breasts
- 15 oz corn, drained and rinsed
- 15 oz black beans, drained and rinsed
- 1½ tsp cumin
- 1½ tsp paprika
- Taco seasoning, to taste
- Garlic seasoning, to taste
- Red pepper flakes, to taste
- Salt, to taste
- ⅓ cup chopped cilantro
- 1½ Tbsp lime juice
- Mexican shredded cheese, for topping
Let’s Make It
- Sauté the onion and garlic in olive oil over medium-high heat until softened. Add the chicken broth, crushed tomatoes, chicken breasts, corn, black beans, cumin, paprika, taco seasoning, garlic seasoning, red pepper flakes, and salt. Bring to a boil, then reduce the heat and simmer for about 20 minutes, until the chicken is cooked through and easy to shred.
- Remove the chicken, shred it with two forks, then return it to the pot. Simmer for another 5 minutes. Remove from heat and stir in the cilantro and lime juice.
Homemade Crispy Tortilla Strips
I made homemade crispy tortilla strips by cutting tortillas into thin strips and frying them in oil until golden and crispy. I seasoned them with salt while they were hot.

Notes From My Kitchen
I tend to eyeball the taco seasoning, garlic seasoning, red pepper flakes, and salt. I like my soup well-seasoned, so taste as you go until it tastes just right to you.
