Easy Creamy Tomato Soup
This creamy tomato soup is one of my favorite fall dinners. I’ve made it my own with extra butter for a richer flavor and plenty of seasoning for a soup that’s comforting, creamy, and incredibly satisfying.

Ingredients
- 2 tbsp olive oil
- 4 tbsp butter
- 1 large yellow onion – diced
- 4 garlic cloves – minced
- 3 tsp kosher salt
- ½ tsp black pepper
- 1 tsp dried thyme
- ½ tsp red pepper flakes
- 1 tsp sugar
- 28 oz whole peeled tomatoes
- 3 cups vegetable stock
- fresh basil
- 1 cup heavy cream
How to Make It
- Sauté the onion
Melt the butter with olive oil in a large pot. Add the diced onion and cook until soft and translucent. - Add the garlic & seasonings
Stir in the garlic, salt, pepper, thyme, red pepper flakes, and sugar. Cook briefly until fragrant. - Add the tomatoes & broth
Pour in the tomatoes and broth. Add the fresh basil and bring everything to a gentle simmer. - Let it simmer
Reduce the heat and let the soup simmer so all the flavors can come together. - Blend until smooth
Remove the basil, then carefully blend the soup until silky smooth - Add the cream
Stir in the heavy cream and let the soup gently warm through. Don’t let it come to a hard boil. - Taste & serve
Taste and adjust the seasoning if needed. Serve warm with fresh basil, cracked pepper, and your favorite grilled cheese.

- Blend with care — if using a regular blender, work in small batches and hold the lid down with a folded towel. Be careful it will be hot!
- Add cream gently — stir it in over low heat and keep the soup at a warm simmer. Bringing it to a hard boil after adding cream can affect the texture.
- Taste before you serve — a little extra salt or a pinch of sugar can make all the difference. Trust your palate!
